Lemon Hemparoons Recipe

Ingredients

  • 1 (14 oz) bag sweetened flaked coconut (about 4 cups lightly packed)
  • 2/3 cup hulled hemp seeds, toasted
  • 1/2 cup (plus 2 tablespoons) finely ground almonds
  • 1 tablespoon lemon peel, grated
  • 1 (14 oz) can sweetened condensed milk
  • 1 tablespoon pure vanilla extract

Preparation

Step 1: Preheat and Prepare

Preheat your oven to 325°F. Generously grease a baking sheet and set it aside.

Step 2: Mix Dry Ingredients

In a large mixing bowl, combine the sweetened flaked coconut, toasted hulled hemp seeds, finely ground almonds, and grated lemon peel. Mix well to ensure an even distribution of ingredients.

Step 3: Add Wet Ingredients

Add the sweetened condensed milk and pure vanilla extract to the dry mixture. Stir with a wooden spoon until all ingredients are thoroughly combined.

Step 4: Shape the Hemperoons

Heap tablespoonfuls of the batter onto the prepared baking sheet, spacing them about one inch apart. Press each mound gently to form a slightly mounded shape.

Step 5: Bake to Perfection

Bake the Hemperoons in the preheated oven for 15-17 minutes, or until they turn golden brown.

Step 6: Cool and Store

Use a spatula to transfer the Hemperoons to a wire rack to cool. They will harden as they cool. Once completely cooled, store them in an airtight container to maintain freshness.
