Hemp seed crusted cod is the perfect easy dinner, featuring a crunchy, slightly spicy crust atop a perfectly cooked flaky fillet of fish.

Ingredients
- 4-6 ounce pieces of cod (defrosted)
- 1/4 cup coconut flour
- 1 beaten egg
- 1 cup hemp seeds
- 1 tablespoon Cajun Creole seasoning

Preheat Oven:
- Preheat your oven to 375°F (190°C).

Prepare Fish:
- Use a paper towel to dry the fish fillets.

Set Up Dipping Stations:
- Prepare three dishes: one with coconut flour, one with the beaten egg, and one shallow dish with a mix of hemp seeds and Cajun Creole seasoning.

Coat Fish:
- Coat one side of each piece of fish with coconut flour by quickly dipping it in the flour.
- Brush the coconut flour-covered side with the egg wash.
- Dip the egg-washed side down into the hemp seed seasoning mix.

- Place the coated fish pieces on a parchment paper-lined baking sheet. For a crispier finish, place an oven-safe cooling rack over the parchment paper, spray it with cooking oil, and place the fish on top.
- Bake at 375°F (190°C) for 20 minutes.
