Hemp seed crusted cod is the perfect easy dinner, featuring a crunchy, slightly spicy crust atop a perfectly cooked flaky fillet of fish.

Ingredients

  • 4-6 ounce pieces of cod (defrosted)
  • 1/4 cup coconut flour
  • 1 beaten egg
  • 1 cup hemp seeds
  • 1 tablespoon Cajun Creole seasoning

Preparation

  1. Preheat Oven:

    • Preheat your oven to 375°F (190°C).
  2. Prepare Fish:

    • Use a paper towel to dry the fish fillets.
  3. Set Up Dipping Stations:

    • Prepare three dishes: one with coconut flour, one with the beaten egg, and one shallow dish with a mix of hemp seeds and Cajun Creole seasoning.
  4. Coat Fish:

    • Coat one side of each piece of fish with coconut flour by quickly dipping it in the flour.
    • Brush the coconut flour-covered side with the egg wash.
    • Dip the egg-washed side down into the hemp seed seasoning mix.
  5. Bake:

    • Place the coated fish pieces on a parchment paper-lined baking sheet. For a crispier finish, place an oven-safe cooling rack over the parchment paper, spray it with cooking oil, and place the fish on top.
    • Bake at 375°F (190°C) for 20 minutes.
  6. Broil:

    • Broil the fish for an additional 3-5 minutes to achieve a golden, crispy crust.
    • Remove from the oven and serve immediately.
