Hemp - Sauerkraut Pancakes Recipe

A typical Czech dish full of vitamin C, thanks to sauerkraut. Great as a healthy snack during the day or as a main dish.

Ingredients

  • 4 tbsp hemp flour
  • 1 handful hulled hemp seeds
  • 500 g sauerkraut (drained to 250 g)
  • 250 g lard
  • 350 g wheat flour (or gluten-free flour and 1 egg)
  • 1-2 tbsp salt

Preparation

  1. Prepare Sauerkraut:

    • Drain and cut the sauerkraut into small pieces.
  2. Make the Dough:

    • Mix all the ingredients (except the hemp seeds) into the flour to make a medium-stiff dough.
    • Roll out the dough evenly and place it on a metal baking sheet greased with hemp oil.
  3. Add Hemp Seeds:

    • Sprinkle the dough with hulled hemp seeds and press them into the dough slightly with a rolling pin.
  4. Cut and Bake:

    • Cut the dough into small shapes.
    • Bake at 180°C for 30-40 minutes until golden brown.
    • Let cool before serving.
