Hemp & Beet Veggie Burger Recipe

A delicious, super healthy veggie burger made with beets, hemp seeds, and sunflower seeds. Easy and quick to make under the grill (broiler).

Ingredients

  • 75g shelled hemp seeds (1/3 cup)
  • 175g shelled sunflower seeds (2/3 cup)
  • 2 beetroots (slightly smaller than tennis ball size each)
  • 1 teaspoon sea salt
  • ½ teaspoon ground cumin
  • 1 teaspoon dried parsley
  • Pinch of black pepper
  • 1 tablespoon ground coriander
  • 2 teaspoons onion powder
  • 1 tablespoon coconut cream
  • 3 tablespoons hemp seeds (keep separate from the first batch)
  • 3 tablespoons sunflower seeds (keep separate from the first batch)
  • 4 tablespoons oatmeal

Preparation

  1. Grind Seeds:

    • Grind 75g of hemp seeds and 175g of sunflower seeds into a coarse meal consistency using a nut/seed mill, food processor, or power blender.
  2. Prepare Beetroots:

    • Grate the beetroots. It’s fine to leave the skin on as long as you remove the rough part at the top.
  3. Blend Ingredients:

    • Place the ground hemp seeds, ground sunflower seeds, and grated beetroot into a food processor.
    • Add sea salt, ground cumin, dried parsley, black pepper, ground coriander, and onion powder.
    • Blend for a few seconds to combine the ingredients into a rustic blend (not a puree). If your processor is small, you may need to do this in batches. A hand blender can also be used but requires more effort.
  4. Combine Ingredients:

    • Transfer the mixture to a large mixing bowl.
    • Add the coconut cream, oatmeal, the remaining 3 tablespoons of hemp seeds, and 3 tablespoons of sunflower seeds.
    • Mix everything together with a spoon until well combined.
  5. Shape Patties:

    • Shape the mixture into patties. The mixture will be moist but should hold together easily. If your mixture is chunky, press it firmly together.
    • You can refrigerate the patties until you are ready to cook them. Chilling them helps to firm them up, but it’s not essential. If stacking in a container, separate layers with parchment paper.
  6. Grill Patties:

    • When ready to cook, carefully place the patties onto a wire grill tray.
    • Grill under medium to low heat for about 10 minutes on each side or until nicely browned.
  7. Serve:

    • Enjoy your healthy, delicious veggie burgers!
