Healthy Autumn Apple Cake with Hemp Seeds Recipe

Apples taste the best in autumn, which is why we've prepared this healthy variation of a typical "autumn cake" using dough made from hemp seeds.

Ingredients
Dough
- 1 cup hulled hemp seeds
- 1 cup buckwheat flour
- 2 tbsp sugar
- 1 tbsp baking powder
- 250g curd
Filling
- 180g tofu
- 5 apples
- 3 tbsp sugar
- Cinnamon (for sprinkling)
Preparation
Step 1: Prepare the Dough
- Combine the hulled hemp seeds, buckwheat flour, sugar, baking powder, and curd in a bowl.
- Mix well to form a dough.
- Press the dough into a baking form, evenly spreading it across the bottom.
Step 2: Prepare the Filling
- Blend 1 apple with the tofu and 3 tablespoons of sugar until smooth.
- Grate the remaining 4 apples.
- Add about 2/3 of the grated apples to the tofu mixture and mix well.
- Spread the tofu and apple mixture evenly over the dough in the baking form.
- Sprinkle the remaining grated apples and a dash of cinnamon on top.
Step 3: Bake
- Preheat the oven to 175°C (350°F).
- Place the baking form on the middle rack of the oven.
- Bake for 40 minutes until the top is golden brown and the cake is cooked through.
