Healthy Autumn Apple Cake with Hemp Seeds Recipe

Apples taste the best in autumn, which is why we've prepared this healthy variation of a typical "autumn cake" using dough made from hemp seeds.

Filling

  • 180g tofu
  • 5 apples
  • 3 tbsp sugar
  • Cinnamon (for sprinkling)

Preparation

Step 1: Prepare the Dough

  1. Combine the hulled hemp seeds, buckwheat flour, sugar, baking powder, and curd in a bowl.
  2. Mix well to form a dough.
  3. Press the dough into a baking form, evenly spreading it across the bottom.

Step 2: Prepare the Filling

  1. Blend 1 apple with the tofu and 3 tablespoons of sugar until smooth.
  2. Grate the remaining 4 apples.
  3. Add about 2/3 of the grated apples to the tofu mixture and mix well.
  4. Spread the tofu and apple mixture evenly over the dough in the baking form.
  5. Sprinkle the remaining grated apples and a dash of cinnamon on top.

Step 3: Bake

  1. Preheat the oven to 175°C (350°F).
  2. Place the baking form on the middle rack of the oven.
  3. Bake for 40 minutes until the top is golden brown and the cake is cooked through.
