Beetroot stroganoff with hemp seeds

Ingredients

  • 1 large beetroot (or 2-3 smaller ones), cut into small pieces
  • Handful of dried mushrooms
  • 5 tablespoons hulled hemp seeds
  • 100g grated tofu
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 2 tablespoons ground cumin

Instructions

  1. Prepare the Ingredients:

    • Cut the beetroot into small pieces.
    • Combine the beetroot with dried mushrooms, ground cumin, salt, and pepper.
  2. Cook the Beetroot:

    • Steam the beetroot mixture for about 20-30 minutes until tender.
  3. Add Tofu and Hemp Seeds:

    • Add the grated tofu and hemp seeds to the beetroot mixture.
    • Cook for an additional 5 minutes.
  4. Serve:

    • Serve the beetroot stroganoff with quinoa or mashed potatoes.
