Apple Hemp Muffins Recipe

Moist, lightly spiced muffins with the added nutrition of hemp seed nuts. These are easy and quick to make, sure to please both kids and adults!

Ingredients
- 1 1⁄2 cups whole-grain spelt flour
- 1 cup oat flour
- 2/3 – 3/4 cup hemp seeds
- 2 tsp baking powder
- 1 tsp baking soda
- 1⁄4 tsp sea salt
- 1 1/2 – 1 3/4 tsp cinnamon
- 1⁄4 tsp ground cardamom (or freshly grated nutmeg as a substitute)
- 1 cup unsweetened organic applesauce
- 1⁄2 cup pure maple syrup
- 3⁄4 cup plain or vanilla non-dairy milk
- 1 1/2 tsp pure vanilla extract
- 1/3 cup raisins or chopped raw banana spears
Preparation

Preheat Oven:
- Preheat your oven to 350°F (176°C).

Mix Dry Ingredients:
- In a large bowl, combine whole-grain spelt flour, oat flour, hemp seeds, baking powder, baking soda, sea salt, cinnamon, and cardamom. Stir until well combined.

Mix Wet Ingredients:
- In another bowl, combine applesauce, maple syrup, non-dairy milk, and vanilla extract. Mix together thoroughly.

Combine Wet and Dry Mixtures:
- Add the wet mixture to the dry mixture and gently fold until just combined. Do not overmix.

Prepare Muffin Pan:
- Spoon the batter into a muffin pan lined with cupcake liners, filling each about 3/4 full (this will make 12 large muffins).

Bake:
- Bake for 21-23 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Serve:
- Allow muffins to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
